Watermelon Burfi Recipe Brings Melt in Mouth Sweet Made in Minutes at Home

Watermelon burfi is becoming a refreshing homemade dessert choice as people look for quick sweets that feel light yet satisfying, especially during rainy evenings and festive moments when something different is always welcome at the table

What makes this sweet stand out is its soft texture and natural fruity flavor that blends beautifully with traditional Indian sweetness, turning an ordinary kitchen experiment into a dessert that guests often remember and ask for again

For this recipe, the basic ingredients are fresh watermelon juice, corn flour, sugar, ghee, cardamom powder and a small mix of chopped cashews and almonds, with an optional hint of food color to enhance appearance depending on preference

The preparation begins with selecting a ripe watermelon, removing the outer skin and seeds carefully, then blending the red flesh into a smooth mixture and straining it well to collect pure juice without any pulp or fiber

In a separate bowl corn flour is mixed with the extracted juice slowly to avoid lumps, while on the other side sugar is heated with a little water until it dissolves into a light syrup that forms the base of the sweet mixture

Once the syrup is ready the corn flour and watermelon blend is added and cooked on a low flame with continuous stirring so the mixture thickens gradually, followed by ghee added in stages until it starts leaving the sides of the pan and turns glossy and smooth

Finally cardamom powder and chopped dry fruits are mixed in before pouring the mixture into a greased tray, allowing it to cool and set properly, after which it can be cut into neat pieces that melt softly the moment they are tasted.
