Festive days always bring a sense of joy and togetherness, and in many households sweets become an essential part of every celebration. Especially during puja and special occasions, people prefer preparing offerings that carry a traditional temple style taste and aroma.

One such classic dish that holds a special place in South Indian tradition is Sakkarai Pongal. Known for its rich flavor and comforting sweetness, this dish is often prepared during festivals and auspicious days as an offering and also as a family favorite.

To begin with the preparation, the main ingredients required are rice, moong dal, jaggery, milk, water, ghee, cardamom, dry fruits, raisins and a small amount of edible camphor. Each ingredient plays an important role in creating the authentic taste that makes this dish so special.

A key step before cooking is soaking rice and moong dal together for about two hours. Once soaked, they should be washed properly and cooked in a pressure cooker with milk, water and cardamom. After about four whistles, the mixture turns soft and well cooked, forming the base of the Pongal.

While the cooked mixture rests, jaggery syrup is prepared separately. Jaggery is melted with water in a pan and stirred until it completely dissolves. This syrup is then strained to remove impurities and added into the cooked rice and dal mixture.

The combination is then placed back on low heat and stirred gently until the jaggery blends well with the rice. At this stage, a pinch of edible camphor is added to bring a divine temple like fragrance that enhances the overall flavor of the sweet.

In a separate pan, ghee is heated and dry fruits along with raisins are lightly roasted until golden. This fragrant mixture is then added to the Pongal, giving it a rich texture and nutty taste that completes the dish beautifully.

Once everything is mixed well, the traditional Sakkarai Pongal is ready to be served. Warm, aromatic and deeply satisfying, this dish not only fits festive occasions but also brings a sense of comfort and tradition to the dining table.
